I’ve spent some time looking at Apple’s website for a chart of conversion, but I couldn’t find one. I’m sure there is one, but I can’t find it. Does anyone have more info on this?

I don’t use the rōmaji input on iPhone anymore (I use the kana input now) but basically iOS (as well as all good IMEs) uses the main romanization systems: Hepburn, Nihon-siki, and Kunrei-siki. “Ji” is Hepburn; “zi” is Nihon-siki and Kunrei-siki.
Small letters can be made with x preceding the romanization: xtsu っ, xya ゃ, xe ぇ, etc.
out of curiosity, why don’t you use hiragana input? romaji input seems much more cumbersome and hiragana input only takes a while to learn, after that it’s nice and fast!
