BTW do you do any sauces with your karage? Myself, I’m a purist and prefer them straight (preferably with beer), however a buddy who makes great karage loves to dunk them in Kewpie mixed with tongarashi… it seems a little silly to me to sauce your chicken when it tastes so good naturally but NGL, his dip isn’t too bad.
