  1. Hi. I love your videos, and I hope you don’t mind me asking a potentially dumb question. I was curious if the fish you use must be “sushi grade”, as I see you use a wide variety of fish. We can only get sushi grade tuna here but I have access to salmon and others (flown in fresh).
