Made this spread for a home dinner party of 5. Little mashup of things since some of them were vegetarian. The nigiri were salmon, hamachi, squid, and scallop (garnishes include fresh green onion, dehydrated green onion, and lime zest). The noodles were buckwheat soba with a marinated ramen egg and scallions. Everything on the wooden board is vegetarian. Mostly Kimbap and the gunkan were sauteed king oyster mushrooms with blistered jalapeno in a sweet mayo soy sauce. Vegetarian potstickers… From the freezer!
Gotta practice some inside out rolls next time
