What’s everyone’s favourite shōka (ballades made between Taishō and Shōwa periods commonly taught in schools)? Mine is definitely «Song of the Seashore | 浜辺の歌(Hamabe no Uta)» but I also like Rentarō Taki’s «花 (Hana)». They’re beautiful but I feel they’re not that well-known outside Japan/Asia.

Friendly tip. If you put plastic wrap on your bamboo mat you don’t have to clean the rice out of it.

Another friendly tip.
Ideally, you’d want a long, thin knife for this. The idea is one long, clean slice through the roll to reduce crushing/deformation. Extra ideally, one sharpened before every meal.
The issue with a shorter blade here is that the back and forth motion to cut through gives more of a chance to cause issues with the shape and consistency of the cut.
Move to a cutting board to do the slicing.
