I have been looking for some high quality Japanese cooking knives, something versatile like a Santoku or Gyuto and something for more specific use such as a Nakiri or Usuba. Unfortunatly, I dont have thousands to spend… Does anybody have recommendations?

Just go to your local hardware store and get some nice high carbon knives and a couple of good whetstones.
Then learn how to keep them sharp and from rusting before you invest in really expensive knives.

Not sure of a brand name, but I know Tsubame-Sanjo in Niigata has a long history of making metalworks such as knives. Maybe it’s worth having a look?
