I’m not sure this dish has ever disappointed me. Matsuhisa in Vail on 8/1/2024. First picture is the famed yellowtail jalapeño with cilantro and yuzu soy sauce. The second dish is albacore with black truffle, dry miso, chives and yuzu dressing. We also got the Taradito roll which is phenomenal and tons of sashimi and nigiri not pictured. Sushi in the Rockies is iffy but the yellowtail will not let ya down.
