Interacting with locals in non-touristy areas: tips

Hello everyone, as my wife and I's trip approaches I think of lots of random questions that google doesn't seem to help with, so thank you in advance for the help on my last question! To make a long story short: I have a strong desire to go to parts of Japan that are not typically frequented by tourists, specifically for the food.

Specifically, I want to go see some food stall/vendors in off-the-beaten path locations. Based on videos I've seen, there's pretty much never any tourists at some of the Yatai's I want to try (there's a town called Kure near Hiroshima I want to visit). I really want to respect the locals as well as the culture and I don't want to come off as a rude american trying to barge in to peoples' everyday lives. I have a passion for food and find it to be the one unifying language and want to find hidden gems with everyday folks dishing out a passion for their craft.

Would I be considered rude for going to places that are only frequented by locals? If I look up the menu in advance and order with my phone or a pre-written card phrase, would that be ok? My wife and I, unfortunately, don't know any Japanese. I want to be as respectful as possible! Sorry for the long question, thanks in advance!
