Trout from Biwako, Japan (Biwa Masu) – Sushi Akira (Tokyo)


Recently enjoyed an exquisite example of trout from Lake Biwa in the Shiga Prefecture of Japan. This was smoked over dried straw before being aged a few days. It just melted in your mouth and had the subtlest smokey aroma to round out the texture. Sushi Akira is doing some interesting, innovative dishes recently and I highly recommend visiting if you have a chance.
