Itinerary Check 14 days in Japan solo

Hello, I will be traveling to Japan in August by myself and I wanted to ask you to review my intinerary, which I already know isn't the best one, but hopefully you will recommend me something, as there are still some free days in which I don't know what should I do. I have already bought eSIM and prepared Suica. In the itinerary I'm intentionally skipping breakfast, lunches, etc. as I think it's quite obvious I will be eating something on the go.
