I started learning roughly 2 month ago and am working my way through the first genki text & workbook. and I am wondering if I am able to use the に&で particle as follows:
Q: たけしさんはいつレポートを書きましたか。
A: 金曜日に
Q: たけしさんは土曜日にどこでアルバイトをしましたか
A: スーパーで
would these be a understandable answers? while I am learning I want to try and get comfortable enough with the language that I can sort of sound like a normal person and not a walking text book.

Yes, the particles are used correctly. But since the questions are in the polite style, the answers should normally be in the same style. 金曜日に書きました。The polite ending should not be abbreviated here. Otherwise it is rude, or the person answering has a much higher status than the person who is asking questions.
The first is fine but be aware that there are two types of time words and only some need a ni particle

Notice for example that it’s istu not itsuni
Doko de is fine and basude in reply is fine.
