Hubs took me out for an anniversary dinner at Tempura Niitome. It has two Michelin stars and is known as the top tempura restaurant in Japan. This prawn blew my mind; it was so crispy and light. It was part of an omakase dinner by Chef Niitome in his tiny restaurant. (We were there with 8 other diners.) The chef was so charming and humble. He mentioned how he’s been making tempura for over 30 years but continues to learn. He recently made videos about his story/cooking: https://www.youtube.com/watch?v=obU2RxbctW4
