I am trying to get back into studying Japanese because I’ve been swamped with work and college. I finally had a bit of a break and was able to come up with an idea for studying. So I heard of writing your thoughts down in your target language, but I don’t have that level of Japanese.
So, using DeepL, I wrote my thoughts out (including the various Kanji) and then I look up the readings and write out the full sentence in Kana, separating the readings, particles, and grammar structures.
So, is this a good way to study or could this be detrimental in the long run?

That sounds like a very bad idea. You won’t know if the machine translation is correct. And even if it happens to be a good translation, you won’t really understand it.
no. read grammar, memorize vocab, and practice reading writing listening to and reading in-context sentences that use the grammar and vocab you are learning.
yes write down your thoughts, tho the complexity of the thoughts you’ll be able to manage will be low in the beginning, but keep at it.
