If you get a chance, grab some fukujinzuke, sweet pickled daikon. It goes well with Japanese curry 👍👍👍

Definitely add carrots, potato, and a protein (beef, chicken, or pork) in addition to the onion next time.
And use medium/short grain Japanese rice like Sekka, Calrose, Hinode, etc.
And depending where you are in the world, if you can get some fukujinzuke or rakkyo, you are golden.
Also, it sounds weird, but some shredded cheddar on top is bangin~

You did great! I like to add carrots and even zucchini (make sure they’re in pretty generous 1 to 2-inch cubes) to mines! It’s just to get some extra veggies in there and the colors helps make the curry look more appetizing. You can also sprinkle some green onions on top.

If you still have more of that batch, add some chopped fresh herbs and ketchup, it will really brighten it up. Otherwise, next time you’re making it, follow the other comments.
Next time get a little more adventurous and make chicken kastu curry. I use Vermont brand curry. That’s more the Japanese style with the curry sauce.

I love pork in Japanese curry over beef. Try a nice fatty cut of pork with potatoes and caramelised onions. I don’t quite like carrots in curry though but I know some people do.
Definitely get a nice short grain, there’s nothing quite as good as a nice steaming bowl of short grain rice.
I love Japanese food and I’m sure this is 100% delicious, but photos of curry on this subreddit always look gross to me. It’s just not a photogenic food.
I always add a bit of grated red apple to golden curry, to add just the tiniest hint of sweetness. It takes it to a whole new level!

I discovered an online seller for golden curry mild and we’re going through them fast 😅 last batch i added french beans to the usual carrot and potatoes, the first one i added some spinach instead, both really good, with or without meat.
Add some carrots for color.
I also marinate mine in a modified gyu dare sauce
Soy sauce 3/4 cup
Mirian 1/2 cup
Sake. 1/2cup
Rice vinegar. 1/4 cup
Spices (7 spice, Chives, & garlic)
Let that simmer… not boil remove from heat. They recommend letting it sit for 12hrs before use. It adds a flavor that is amazing. I aslo dip my steak in it too for a little extra flavor.
It may be just the camera, but the color doesn’t look at golden as it should
