Current Method:
I generally remember Kanji by actively writing, so with my 英語 -> 日本語 deck, for every vocabulary word I write the Kanji for the word (if applicable), cards get marked wrong if I know the definition but get the Kanji incorrect.
Switch to Monolingual:
I’d like to switch to monolingual, but I feel like definitions (J-J) sometimes have some of the same Kanji within the definition. I feel like that will be a cue for remembering the Kanji without using recall skills.

Does anyone have a similar method and a manageable solution?

There’s a nice Kanken style prep deck that has all JP on front and the underlined word is written in hiragana, with its kanji on the back. You could just ignore the English on the back
