lately I’ve been trying to really grind on my listening skills for japanese but usually the topics that the podcast is talking about is boring and I get disinterested in continuing.

No podcast is available in that genre with that level
Instead of trying to get something at your level, try to find something harder that is interesting and has transcriptions. So you can listen and read at the same time. That’s what I do with Haruka’s podcast.
it’s very unlikely that someone is going to make a podcast about a hobby of theirs *specifically* in a very simple / “easy for foreigners to understand” kind of way, so more than likely you’re out of luck.
there’s no harm in listening to something above your level though, especially as podcast apps usually allow you to slow down the pace.
