   Is your nomenclature correct though? I honestly don’t know… I’ve always heard of pressed sushi referred to as oshizushi. It could be that different parts of Japan call it different things (or that I’m thinking of something different altogether!)

3. I would love this! A local hole-in-the-wall that is an absolute gem (probably the best Japanese food in my city) has both mackerel and a sockeye salmon hakosushi on the menu permanently that are just heavenly.
