Shiitake is great as a filling, pickled red pepper (with the skin peeled) too and lots of other yummy things! Check out the book Sushi Modoki if you want to make vegan sushi at home!
Sweet potato sounds like it would be great in a roll, and maybe sautéed mushrooms.

Only vegan roll I’ve had is one with avocado and toasted peanuts and it was actually delicious.
I’m not vegan or vegetarian, but in this household we love the sweet potato rolls and cucumber rolls. The sweet potato rolls are especially good. They’re tempura’d before they’re rolled, so they’re crunchy and soft, sweet and savory (with the sauce). Sooooo good.
When I was pregnant, I ate a lot of that sort of sushi because I wasn’t allowed to eat raw fish. But I did have a few cooked-fish rolls. My favorite non-raw roll was eel and avocado. Mmmm.
Eel sauce and sweet potato… I’ll start there. That sounds excellent.
Wish I could dislike this 100×… vegan sushi. Yuck 🤮
hell yeah – I love it. Chefs can do all sorts of cool preparations to the veg to add more / unique flavors + different veggies just have lots of different flavors. I eat fish and prefer it, but I like to mix in some veggie rolls to keep things more affordable.
Shiitake rolls are great… there is a place by me that does a warm shiitake with a vibrant marinade and it is delicious

I love vegan sushi! I am mostly vegetarian and was vegetarian for over 20 years so it comes natural.

If I’m not in the mood for fish or anything raw my favorite are the tempura vegetable rolls or sweet potato, cucumber .. sometimes the umami of the veggies, seaweed with the soy sauce is just what I need.
Only if it’s not a fake fish attempt…. But avocado cucumber etc is fine by me… and definitely no paper thin fruit roll ups in stead of nori…. That’s just insulting to sushi…

Yes, also, these are well rolled; the rice is not smushed and there is a good rice-to-veggie ratio.
