Tofu is like a blank canvas, making it a fun ingredient to work with in the kitchen. I drained this firm tofu first to get rid of excess water and then infused it with ginger and garlic. A coating of potato starch helps it crisp up on the outside while making the surface of the tofu hang onto the teriyaki sauce (equal parts soy sauce, sake, and sugar) like a sponge. The end result was a piece of tofu that was crispy around the edges and tender in the center, with loads of flavor throughout.
