Asked my sushi-fiend Japanese friend and she seemed concerned, if that’s any help.
Its rice arare, used for some crunch texture and garnish on rolls at my restaurant but they don’t belong on sashimi IMO
It looks like tapioca disease. A parasite in salmon. Not supposed to be harmful to humans but I wouldn’t want to eat one and find out. I can’t believe a place would sell sashimi looking like that.

First thought it was sesame seeds, but I’m pretty sure it’s rice arare
Have you tried asking the restaurant it’s from first??
