It took me longer than it should have to realize that, in the ingredients list, “SEAT ANGLE” meant “sea tangle” (seaweed) and not that they had created a magical condiment that changes flavor when you recline your seat.
Side note: if you tasted it on an airplane, odds are pretty good that it’ll taste quite different on the ground.

It’s Mentsuyu type sauce, so the common soba sauce, with no unusual ingredients.
I think this label or bottle has been reused, as the label says this product expired more than 7 years ago.
The label claims that the sauce is made by [柴沼醤油醸造 (Shibanuma Soy Sauce Brewery)](https://www.shibanuma.com/).
I found a noodle sauce currently being sold by this company.

The ingredients are different from your image, but I assume it is probably a similar product or the ingredients have been changed.
The most generic type of mentsuyu sauce in Japan is this brand by [Yamaki](https://www.amazon.co.jp/%E3%83%A4%E3%83%9E%E3%82%AD-%E3%82%81%E3%82%93%E3%81%A4%E3%82%86-500ml%C3%973%E6%9C%AC/dp/B079LCWKCT) you might be able to buy it online quite cheaply.
