Just got these 2 today based on recommendations.
Loving them both: my tasting experience
On the left is the Yamaroku bisiho – great umami and depth of flavour, good level of saltiness (for me), feels more tamed on the palate.
On the right is the kishibori shoyu – this is an explosion of umami and higher saltiness, tastes amazing.
I can definitely see their strengths for different sushi/sashimi/meals.
