Actually “oshinko” can refer to any pickled vegetable. This oshinko is specifically “takuan” which is pickled daikon radish
So…the yellow is takuan and is pickled daikon radish. It’s a traditional popular tsukemono or Japanese-style pickles. It’s good in oshinko maki which is actually a sushi unlike poke which is not; and is usually considered more a donburi if the poke is served on plain rice.

Takuan. It’s a pickled radish like most have said. In this case takuan are normally pickled and dyed a YELLOW color, such as the picture you have provided.
