For those wondering. I cured the hamachi with molden salt, lime/lemon/orange zest. Cut orange segments and wrap the hamachi slices around it. Top it with a yuzu avocado mousse and crispy fried shallots. Little greens are micro red shisho. the sauce is yuzu ponzu truffle oil. Very light and refreshing.
