I got two Japanese inspired cook books for Christmas, Cook Anime (Diana Ault) and Bake Anime (Emily J Bushman).
They both have a Taiyaki recipe, one is sweet red bean filled and the other is custard filled. I plan to fill my first Taiyaki with either chocolate sunbutter or sweet red bean paste if I can get some before I run out of patience, lol.
Problem is, the recipes are pretty different. Both say they make 8 taiyaki. I’m not very good at cooking, and I’ve never had authentic taiyaki, so I can’t imagine how they’ll each work out.
Can anyone tell me which recipe is more authentic?
What will be the differences in taste and texture, based on the differences in their ingredient proportions?
I know I could just make them both and try them (and I’m sure I’ll end up doing that eventually!), but I want to try and start with the more authentic recipe first.

First one. The second has too much baking powder and no egg.
You can also look up “Imagawa Yaki” recipes too. Taiyaki is just the tokyo version in the shape of a fish. (it has many different names)
