I want to start an online English Conversation Café using Zoom for Japanese natives. Each day we will discuss a new topic, completely in English.
Is this possible? What visa will I need?

It sounds like a fine hobby, but what are you planning to do for money? You’d need a status of residence that relates to whatever job it is that you’d be doing, not your spare time hobby.
Since it’s online, you can do it from your home country, and you won’t need a visa.
If it’s a physical cafe, business manager visa is probably the best. Not sure this can be done with an online solution, since you kind of need to justify being in Japan. There are plenty of English conversation schools, so it would be hard for you to build a customer base from nothing, and no experience or credentials
Read the visa wiki in the sidebar to do the basic research about various visa. For regular work visa (humanities), you’d need an employer to sponsor (you can’t just hop over here yourself).
Just out of curiosity, why not something within the field of chemistry, since you’ve taken the effort to go all the way to PhD?

You’re about to get a PhD and you want to get into English teaching? ヤバ. From what you’ve said you’re not eligible for any visa.
Why not just try for a postdoct at a Japanese Uni instead?!
