I have a seafood shop nearby that sell sushi grade fish. All the ingredient for the protein is around AUD 30. (~21 USD) 160g kingfish 300g salmon 15g Ikura.
This is the first time I tried putting Onsen egg with sashimi. What a pleasant surprise! Eating Onsen egg with salmon, ikura and rice is so so creamy and flavourful.
I made the Onsen egg with sous vide (62C 1 hour) for bulk batches. Alternatively, there are recipe online that is quicker using pot.
