I’m a keen cook who’s just recently moved back to Japan. Had a rude awakening when I realised even the basic components of my cooking knowledge aren’t available here. Can someone recommended local alternatives? I can read Japanese.

justonecookbook.com is AMAZING and written by Namiko Hirasawa Chen. She has a website and physical book.
I usually just type in the name of the food I want to eat plus レシピ into google images and choose a picture that looks like what I want to eat and go from there.

Seriously, a junior high school home economics textbook will get you set up for the basics, including what basic ingredients are and how recipes in Japanese work.
Alright, I’ll bite. What are these supposedly ‘basic components’ of cooking that aren’t available here, or is it more a case of not being able to read what they are in the supermarket?
No shame in that, but it doesn’t mean you need to throw shade on the local shopping scene.
(And I say that as someone with crippling withdrawl from all things anise-flavoured.)
I highly recommend this site for all the basic dishes. Lot’s of home cooking ideas
Koh Kentetsu Kitchen on Youtube has many simplified japanese recipe and you can also train your japanese listening skills.
If you can read Japanese I recommend going to your local library and having a browse of their cookbooks. It’s pretty easy to sign up for a library card.

Here is one of my favourite Japanese recipe websites with recipes in English. There’s not a huge range, but it covers most of the major “signature” dishes, and is perfect for someone starting out trying to learn how to cook Japanese food.
