It used to be that people could judge the quality of the establishment and sushi chef by ordering the tamago because you could tell how well they understood and used the various ingredients and how well they controlled the cooking process etc but nowadays many sushi restaurants will use pre-made tamago (often ordered from well known places). Still very high quality tamago, just not made in house.
