Can anyone identify this rice and tips to achieve it?


This Japanese/Italian fusion restaurant has rice that I love. It’s fluffy, slightly sticky, and has sheen. Anyone know rice type and/or cooking method to achieve this rice? I usually make Tamaki Gold in my Zojirushi at home but it’s not anywhere near as good.

  1. Just looks like your regular short grain rice with a lot of extra starch, sticky rice.

Honestly it looks like typical short grain japonica that wasn’t washed enough (by washing you remove the extra starch). 100% you can have the same result by going to any store near you, buy what marketing calls *sushi rice*, cook it in a rice cooker with a very very light wash. I know, my first rice attempt looked like that and I hated it haha.

  3. What’s the name of the restaurant? Do they not have a menu online that can give clues? Any further context could help.

  4. Try pre rinsing until the rice water is clear and use filtered water from a charcoal filter. Let the rice soak like an hour before turning on the cooker. Make sure to fluff up the rice with the rice spatula then close the cooker for a minute before serving. Also avoid the quick mode on your rice cooker. Is your Zojirushi an IH model?
