Yes you can. A lot of sushi made in the US is made with medium grain rice. New Variety and Calrose, specifically. The common ones, Kohuho Rose, Botan, Nishiki are all medium grain.
Not to say that it’s going to be super ideal. Not sure how deep down the sushi rice rabbit hole you are. I’ve taken to importing small batches of nanatsuboshi or kinuhikari rice, which, to me, is slightly better for sushi than the more common koshihikari rice.
Should be fine just make sure you add enough water
Yea it’ll be fine…. The most important part is the sushi vinegar mix…
