This may seem obvious to Latin/Asian people but as an American beef tongue is not something that was familiar to me but I’m glad I tried it. It has an extremely strong pleasant beef flavor (which can be lacking in other cuts of wagyu IMO) and the texture is very special with a pleasant chew while still being quite tender (a bit hard to describe). It is NOT similar to offal (which makes sense because it’s skeletal muscle).

Beef tongue is amazing. I grew up with it. I only lament that it’s so costly now that’s it’s gotten more popular!
