I’ve only ever seen smoked salmon in very thin slices.
The color is certainly not great, probably just not exactly fresh from the package. Typically smoked salmon pairs with something creamy like cream cheese, it looks like the terribly made rice might be providing a similar texture 😂
smoked salmon is usually always in slices, it might be affected in color by being close to the nori and the thin format smoked salmon comes in. but yes looks fairly fine, I mean this roll could do with some phili cream cheese.
I wouldn’t order from there again. To go sushi is never great.
You are thinking of hot smoked salmon. In Sushi most places used the cold smoked salmon which looks more similar to Lox.
That rice to fish ratio is crazy
That’s totally normal. Eel is very brown in color and it may have some sort of rub on it to help with the smoky flavor or smoking process. Chunks would only be if it was dry smoked or cooked. Restaurants do their rolls differently place to place. All good

I’m actually in Alaska and saw a smoked salmon roll in a place today and it was fully cooked. Smoking it cooks it. It was in chunks. This place is like the ground zero for all things salmon and sushi is huge here because its native I guess
