Can you read and write? That would be the first thing required I think.
Dont know any courses but an Electronic Dictionary by Casio with the Medical terminology add-on would be your best friend, when you venture down this path.
As far as I know you have to have N1 to health related stuff. I don’t know if exists a higher level (even outside JLPT) of japanese for you to be able to work in that field. At least for now, aim for N1 while you search for something that fits your needs
