I bought a PS5 here in Tokyo and I’m planning to take it home. Will I get taxed if I open the box before going to the airport? Should I just take it to the airport unopened as a carry-on? I don’t know how it works…

If you have to pay taxes at all, it will be in the country that you are traveling to.
If you bought it tax free, you should keep it unopened to avoid possible issues.
If you paid the tax, Japan won’t take any extra tax for export. It’s the destination country that you have to check with.
I doubt the destination country would take tax/customs for personal electronics though.
If you bought it at any second-hand store, I advise opening it and checking it in case something is wrong (very small chance considering how Japan does second-hand, but JIC).
