The tuna and salmon seem to be separating from the fat. The color seems fine though, but I couldn’t find anything helpful online? Is this due to temperature changes?
Thanks. I wasn’t certain so I skipped. Stopped by a sushi place nearby and bought bogo sashimi. Will see how it goes.
When the fish is really fresh and tender, chutoro will always separate from the fat. Doesn’t mean it’s good or bad if it’s separating, but if it’s great fish, it will separate. It takes skill to cut the fish to avoid it falling apart

Yeah it’s normal for thinner cut fish to come apart when it’s naturally tender. The person who prepared it simply didn’t take much care to make it pretty in appearance.
If Salmon looks like that and its paired with boiled Ebi (shrimp)….i just know that no one there knows what good sushi is so 100% a hard pass!

Looks like it might hace come apart while being cut or stretched over the rice.
Also if you are buying it from gas station, a major warning that it might contain bacterias that might be hugely disastrous for your tummy. Don’t buy cold, uncooked things from gas stations.

This usually happens when they use frozen fish and not properly thaw them. So yes they’re edible but obviously not great of a quality.

Yeah, I’d say so. Don’t expect it to be the freshest, best sushi you’ll ever have, but it should be good to eat
