I’m wondering if I have too much city strolling and too little nature/temple seeing in my current itinerary. Thinking of making Day 3 a Kamakura/Yokohama day trip instead, but that might make my city strolling time too short? Should I just keep as is? Keep in mind that I’m going on July, so was also thinking maybe Kamakura would be good since it’s possibly colder

Yes, Kamakura gives you a taste of old Japan and is really beautiful. That and Enoshima are a great day trip you can do in one day.
Absolutely, yes. Your itinerary is basically made of theme parks so you may not like some real Japan, but that would be a very educational and therefore welcome addition.
Throw away Inokashira park or Ikebukuro, lump together attractions from other days.
Other comments:
1. Seems you have to it dinners set very late. Most shops where you can actually eat dinner will be closed by that time. Try to have dinner before 8PM
2. Every day includes kombini breakfast. It must be because you are going to be on budget, but realise that kombini is anything but cheap.
There’s also lots of poor planning. For example, only 30 minutes for Sensoji: you won’t be able to reach the temple in that time. Give it solid two hours.
Your dinners are planned really late. Most shops start closing around 8-9. Only a very few we saw were open later. Also for Disney, they post they open at 9 but they start letting people in around 8:30. If you’re there by 9, you’re already way behind in terms of lines and stuff.
