Hamachi is my guess, cut with a very sharp knife.

Hamachi. Maybe rock cod. You can tell the difference by taste. If the fish was fatty, it’s hamachi. If it was light and not fatty, it was rock cod

Either red snapper or maybe a died tilapia even I see them very common as a “red snapper” substitute that’s cheaper
