It looks like tempura curry udon, which uses curry soup stock and topped with tempura and tonkatsu, and katsu curry udon with tonkatsu.As an aside, there is also curry nanban, which is curry udon with sliced green onions, but it doesn’t appear in this video. 🤤
きつね揚げ It is deep fried tofu called abura age, simmered with dashi stock sugar and soy sauce. It is mostly used for udon noodle and inarizushi
