Anyone have a good recipie for no pork Ramen?


I so miss the amazing ramen in Japan, while the best used pork, some really good ones didn’t. My GF can’t eat pork and like 95% of the recipies I find need it. I’ve tried about 5 now which are more dan dan or tan tamen than ramen.

Decent one for [Dan Dan](https://thewoksoflife.com/dan-dan-noodles/) if anyone is interested. Changed to beef and modified some. Flavorful, but still not Ramen.

Good Ramen takes a day+ for the broth, I’m not looking for a quick recipie.

Even searching in Japanese, most results come up with Western recipies.

  1. Lots of chicken based ramen. Many will still call for a chashu as part of the assembled bowl, but you can skip that or replace it with braised beef or chicken or whatever. If you look at the wiki at r/ramen, there are several recipes created by one of the mods. All the variations of shoyu (Tokyo, new wave, and truffle), shio, tori paitan, tantanmen, and one of the tsukemen are all pork free.

  2. There are a ton of decent ramen soups out there without pork, you can always try a a seafood based broth.

    Honestly, if you want to “cheat” just look up any style stock and focus on making a incredible tare 🙈 ng as it’s pretty much the same thing. I’ve used recipes for french style chicken-stock with tare and it’s just as good if you’re not looking to keep things super 100% authentic.
