Hello! After waiting for my COE to come through, I can finally apply for my visa. That being said, there are a couple of things that I am confused about regarding the application.
1. According to the consulate website for my location (SF bay area), I need a copy of the front and back of my COE, however since I received an online COE, I only have an email. Should I just include the email printed out or is there a different procedure to submit it?
2. On the visa application form, there is a section for current employment. This may sound dumb, but should I be listing the company I currently work at, or the company that I will be working at when I am in Japan?

ideally the document should be an attachment on the email which you can open and print front and back. and i would assume it is your currently employment, where you work now.
