Super Simple Songs 日本語, sometimes I can find episodes of Shimajirou on YouTube, and there are also a few channels where a mom plays pretend using Anpanman toys if you search for アンパンマン
Doraemon is pretty basic, if you ignore the wacky nonsense names of the gadgets, it’s a good anime to learn Japanese. Not to mention there are a lot of episodes. If you can watch one episode per day, you’ll still be set for 5 years.
Miffy has an official Japanese Channel.
Pokémon Kids JP channel has lots of songs and shorts.
Peppa pig has lot of content in JP on YouTube.
Not YouTube, but HiDive ($5/month) has the Japanese dub of Hello Kitty. I feel pretty accomplished watching that show since I’m able to understand the episodic story of each entry while rarely having to gaze down to the subtitles, that’s cuz I still consider myself まだまだ。

Cocomelon is a great one
Disney Plus is your friend. Virtually all of their kids and preschooler shows have Japanese dubs and subs available. My son watches five different Mickey Mouse shows on there and his Japanese is better than mine.

Neko Samurai! It’s cute and great listening practice.
