Hello! I have some advice for you. Failing when you first start is a good opportunity to learn, it shows you exactly where you need to improve. Some tips I have with rolling is before you roll, make sure the filling inside is spread evenly. The ends on both sides don’t have any so they are empty. You can add double the amount of avocado to the roll and make sure it’s balanced. If you’re afraid of the filling coming out the sides when you roll it, you can push it back in when you’re securing the roll with the makisu. Hope that helps!
From my personal experience, hosomaki rolls can hold about half an avocado and a uramaki can fit about 3/4 an avocado. This is assuming you’re using average sized Mexican avocados. Also try to flip the end sides the other way for presentation as it looks much better that way. Also I have to mention that your cutting skills are pretty consistent as the rolls are pretty even, so props to that! Keep up the good work!
