I’m wanting to apply for the Highly Skilled Professional visa. Just wondering if I met the point criteria now, and then a year later upon renewal I no longer meet criteria previously met (i.e. fall in a different age bracket, or salary range, etc) what happens then?

Once you have the HSP status, your status will be valid for the duration of your period of stay on that status (5 years). However, you will not be eligible for a new HSP status (switching jobs or extension) or the early PR path via points.

If you don’t meet the requirements for the status of residence at renewal time, then you can’t renew that status of residence.
Fortunately the Highly Skilled Professional status does not cover any work that isn’t already covered by other statuses such as Specialist in Humanities or Engineer, so instead of renewing your status, you’d just apply for a change to the more appropriate status.
