If I was to guess they cubed the eggplant and lightly coated it with flour of some kind and deep fried, then drizzled the sauce over it.
Haven’t had luck finding a recipe online but any suggestions?

Maybe Nasu no Agebitashi (茄子の揚げ浸)? It’s deep fried without flour, but can have a little crispy skin.
Your link says it’s tempura eggplant – “Tempura floured eggplant & shrimp, tossed in a sweet miso sauce”. The picture of how it’s fried looks quite thick, not like Japanese traditional tempura eggplant, it almost looks like a batter for orange chicken.
Nasu dengaku is not deep fried, and tempura is not traditionally coated with a sweet miso sauce. So this is some kind of hybrid original recipe. Regardless I’m sure if you enjoy deep fried Japanese eggplant, you can tempura the eggplant: https://www.justonecookbook.com/vegetable-tempura/
