1. Enlighten me if I’m wrong – aren’t tatakis supposed to be seared on the outside? This looks like sashimi… in broth

2. Tombo is so underrated and not talked about to much in sushi but love this fish and it may not be the nice red like Akami but for the price it’s a good substitute if you can’t get Maguro🙏
