Looks great! Those are largish portions of uni? Do you know what type of uni? I always prefer the chef rolling the hand roll or in this case maybe bite-sized nigiri him or herself for some reason. I guess that’s how lazy I’ve become! In all seriousness, there’s something gentle and tender about the chef handing the rolled bite for immediate consumption at the peak of flavor and temperature.
