7 day aged Red Sea Bream

Last week I got a shipment of red sea bream. Had it fresh and left another one in a dry ager.

Definitely sweeter but the texture is a lot more tender. I have a very sharp knife and it was a bit challenging cutting it as it was pulling apart.
