I’m not a fancy person, so I obviously consider Saizeriya. What do you think? Also, last nomikai was in a kinda private space. Is this necesary for nomikais to have certain isolation?

Is this for your company? For a group of friends? For people in a sports or other hobby group?
If this is too difficult for you, pass it to someone else.
Most nomikai will have at least 10 people and the restaurants will usually have private rooms for them to use because a bunch of drunken people shouting at each other in a room is not great for the other customers.
The reservations online will say 個室 for private room. Like, this post is so random.

Unless there is a very tight budget restriction, I’d not suggest Saizeriya. Any coworkers who are foodies? I find that female coworkers tend to be very familiar with nearby restaurants.
Whether or not a private space is necessary will depend on how many people will participate.
Musashisakai station is in Musashino not Chofu, but whatever, just nitpicking.
Search google maps for Italian restaurant, filter out the places below 3.5 stars. Check the remaining kuchikomi, and figure out if they can fit your group. See their menu online and whether they do courses (they prob do). Call the restaurant that best fits your needs and make a reservation.
