4. I’m about the same step as you are and my next step is using less rice. Hope that helps.

   Looking good. Try using a little less rice on your rolls

   For making rolls making uramaki (inside out rolls) I find is easier to shape

10. If I nit pick I’d like slightly less rice and more fish/stuff in the Maki.

    But it all looks excellent and the knife cuts on the nigiri are really smooth!
